UNA IS NORTH SYDNEY’S NEW GOURMET GO-TO

Una is North Sydney’s new neighbourhood providore, a foodie’s utopia filled with house-made and expertly sourced gourmet artisanal produce and essentials. From local and international cheeses and charcuterie to house-made pastas, condiments, boutique wines and spirits, and even a homewares edit. Una opens in the Walker Street precinct, North Sydney’s newest food and dining destination, on Tuesday 9 July.

“We have curated a range of high quality, gourmet products that you can’t find in a typical supermarket,” explains Carolina Joly, venue manager (who also oversees sister venue, Loulou Boulangerie & Traiteur). “Whether it’s picking up an easy meal, creating the ultimate grazing board, or sourcing the best French butter to elevate your cooking, Una has it sorted.”

Una has more than 15 different cheeses on offer, from local and international giant cheese wheels sliced to order through to artisan smoked cheeses, a variety of blues, and incredible burrata and feta. There’s an array of tinned seafood, gourmet sausages and cured meats, from locally sourced jambon to imported prosciutto, sliced to order in store. Chicken liver parfait, terrine, and rillettes are sourced from sister venue, Loulou Boulangerie and Traiteur. In the future, there are plans to offer weekly veg boxes with recipe suggestions from the precinct’s chefs.

Each of the Walker Street precinct venues - Sol, Soluna, and Genzo - have an ‘essential pantry items’ range available in Una that includes items like Genzo’s chilli crunch condiment; crackers made from Sol’s leftover bread; jam made in Soluna, and more. The chefs upstairs at Soluna make fresh pastas and sauces to take home while Genzo’s kitchen packages up freshly made soba noodles and condiments.

Alongside the gourmet produce is an assortment of pantry essentials ranging from artisanal and chef-favourite butters, milk, and creams by local and French producers through to local and international oils, vinegars, spices and more. Whether it’s a gift or just looking for the perfect platter, Una’s homewares edit includes carafes, serving ware, chopping boards and much more by brands like Saarde and Maison Balzac.

A collection of boutique wines and spirits is curated by precinct sommelier, Thomas Craig (ex-Loulou Bistro, Catalina). The focus is on producers with relatively small production from Australia, France, Italy, Spain, and New Zealand. Spirits span local and international gin, scotch, as well as French Armagnac, cognac, and calvados digestifs.

“Una providore and Sol bread and wine next door complement each other so well,” explains Rhys Connell, Walker Street precinct’s executive chef (ex-The Gantry; Sepia). “Pick up gourmet produce and wines at Una to take home, or head next door to Sol for fresh bread and pastries, charcuterie, tins, sandwiches and more with a glass of wine and great hospitality service.”

Una’s textured and tactile monochrome tonal palette takes inspiration from the simplicity of Italy’s alimentaris, displays overflowing with an abundance of quality produce. A restrained interior framework allows the vibrancy and beauty of the produce to pop.
